Cranberry Apple Wild Rice

Ingredients:

  • 2 tbsps Oilve oil
  • 1 cup wild black rice
  • 1 cup veggie stock (made to directions)
  • 1 cup water
  • 1/3 cup Orange juice
  • 1/3 cup dried cranberries
  • 1/2 cup pine nuts or slivered almonds
  • 1 red apple diced

Directions:

  1. Cook onion in olive oil in a med large pan for 3 mins.
  2. Add rice, water and stock to the pot and simmer , covered for 30 mins .
  3. Add orange juice and simmer covered for another 15 mins on low.
  4. Strain rice well and add cranberries, still and leave for 5 mins.
  5. Toss in all remaining ingredients and serve warm or cold.
