Ingredients:
- 2 tbsps Oilve oil
- 1 cup wild black rice
- 1 cup veggie stock (made to directions)
- 1 cup water
- 1/3 cup Orange juice
- 1/3 cup dried cranberries
- 1/2 cup pine nuts or slivered almonds
- 1 red apple diced
Directions:
- Cook onion in olive oil in a med large pan for 3 mins.
- Add rice, water and stock to the pot and simmer , covered for 30 mins .
- Add orange juice and simmer covered for another 15 mins on low.
- Strain rice well and add cranberries, still and leave for 5 mins.
- Toss in all remaining ingredients and serve warm or cold.
